Although initial reactions to tteok may vary, this traditional Korean “rice cake” has a special appeal. Depending on the ingredients used, its taste, color, and texture vary, but once you get used to the chewiness of this dessert, you would fall in love with every kind.
One of the most common and most popular tteoks is baekseolgi (백설기). This simple tteok is made only with rice flour, sugar, and salt; thus, it can easily be transformed into a new kind of tteok. In this recipe, baekseolgi is made into a donut with sweet cream sandwiched in-between.
Ingredients:
180g of Rice flour
1 Tbsp of Natural food color (green tea powder and pumpkin flour are some of the common natural food colors used in tteok)
60-80g of Water (Add as needed)
2 Tbsp of Sugar
Cream (Choose any of your favorite – butter cream, red bean paste, green tea cream, and whatnots)
Directions:
- Add natural food color to rice flour.
- Add water to the mixture and sift.
- Add sugar
- Pour the dough into donut mold and shape well.
- Steam for 20 minutes
- When cooled, spread cream on one side of ttoek and place another ttoek on the top.
